Paleo Fudgesicles 1

———> You Will Need:

1 can of full fat coconut milk, I like the Thai Kitchen brand (there are a few others that have less junk fillers in them).

4 Tbls. Cocoa powder (I used trader joes stuff but would love to invest in some really good cocoa, any suggestions?)

3-4 Tbls. either Maple Syrup, Raw Honey, or substitute stevia if your doing the whole30 or GAPS diet;)

pinch of celtic sea salt. (optional)

*High speed blender

*Popsicle molds (check thrift stores or ikea has some that are ok).

Add all ingredients into your vitamix or other high speed blender. Blend on high until its good and mixed. No Lumps!!

I add a few dark chocolate chips to the bottoms of the popsicle molds just for extra Chocolatiness (new word!) Pour in the mixure but stop just shy of the top (they expand a bit when freezing).

Freeze overnight. Depending on your freezers freezing powers it might take long.

: Ghost Pom Garland :

What you’ll need —>

* kleenex/tissues

*super jumbo cotton balls

*8lb test fishing line. (the cheap stuff :0)

* hand sewing needle

* white acrylic yarn

* pom poms

* scissors

* tacks or washi tape to hang.

:Directions:

Make a bunch of kleenex ghosts, by placing a couple cotton balls in the center of tissue and tying the top closed with white yarn. It’s as easy as that!

Next thread your needle onto the fishing line about 4-6 feet in. Grab a pom pom and thread it onto the fishing line far down (that will be the far left side of the garland).

Now grab a ghost and thread through the top of it’s head like this,

Slide the ghost all the way down the line to the pom pom and then thread your needle back up through the pom, thus causing the ghost to “stay” in place. Repeat with all the pom poms and ghosts.

Tie the ends off. I use a simple knot and do it over and over again to secure a loop on the ends of each side of the garland to hang it with.

Your Finished!! Find a super spooky spot to hang your garland.

: The Best Paleo Pumpkin Pie Muffins Ever.&#160;:

They are gluten, nut and dairy free. Except if you add a big dollop of whip cream to the top ;)

*adapted from an www.elanspantry.com banana walnut muffin recipe.*

Preheat oven to 350.

Blend the ingredients below in a blender on high until it’s completely smooth.

3 eggs
1/4 cup coconut oil 
1 cup pumpkin puree (i used trader joes brand canned)
3 pitted dates ( I used medjool)
1 t vanilla 
3 T maple syrup or stevia to sweeten

~Next mix these ingredients in seperate bowl. Sift/whisk.~

1/3 cup coconut flour
1/4 t sea salt
1/2 t baking soda
1 heaping T pumpkin spice blend ( again I used the trader joes brand)

Add wet to the dry mix. Place mixture in lined muffin tins. 
Bake @350 for 25-30 minutes.

: Falling Eyelet Cowl :

A little recipe if you will for a narrow long eyelet cowl. It can be worn long or doubled up to keep out the chilly fall winds.

Ingredients:

Appox. 350 yd’s of fingering weight yarn. I used a bamboo nylon blend (lovely drape). You want to choose a yarn that has great drape and is soft around the neck. A merino/silk blend would be perfect too!

Gauge is 5.5sts per inch.

Sz. US 6 (4.0 mm) 27”-32” circular needle.

stitch marker, row counter (optional).

Cast on 248 sts. My preferred method to cast on is the long tail cast-on.

Carefully join in the round and place marker to note beginning of round. Knit one round even.

1.) Purl one round even.

2.) knit one round even.

3.) purl one rnd.

4.) knit 5 rounds even.

5.) purl one rnd.

6.) *k2tog, yo*    repeat between *  * entire round ending with a yarn over.

7.) purl one rnd.

8.) knit 4 rounds even.

9.) purl one rnd.

10.) *k2tog, yo*   repeat between *  * entire round ending with a yarn over.

11.) purl one rnd.

12.) knit 3 rounds even.

13.) purl one rnd.

14.) *k2tog, yo*   repeat between *  * entire round ending with a yarn over.

15.)  purl one round.

16.) knit 2 rounds even.

17.) purl one rnd.

18.) *k2tog, yo*   repeat between *  * entire round ending with a yarn over.

19.) purl one rnd.

20.) knit 4 rounds even.

21.) purl one rnd.

22.) *k2tog, double yo*   repeat between *  * entire round ending in a double yarn over.

23.) purl one rnd. When you come to the dbl yarn overs purl only into one of them and drop the other.

24.) knit 4 rnds even.

25.) purl one rnd.

26.) *k2tog, yo*   repeat between *  * entire round ending with a yarn over.

27.) purl one round.

28.) knit 2 rounds even.

29.) purl one rnd.

30.) *k2tog, yo*   repeat between *  * entire round ending with a yarn over.

31.) purl one rnd.

32.) knit 3 rounds even.

33.) purl one rnd.

34.) *k2tog, yo*   repeat between *  * entire round ending with a yarn over.

35.) purl one round.

36.) knit 4 rounds even.

37.) purl one rnd.

38.) *k2tog, yo*   repeat between *  * entire round ending with a yarn over.

39.) purl one rnd.

40.) knit 5 rounds even.

41.) purl one round.

42.) knit one rnd.

43.) purl one rnd.

44.) knit one rnd.

Bind off. I used the knitted lace bind off by Miriam Felton (youtube video). It leaves a really neat and tidy edge and is nice and stretchy.


Weave in the ends. Soak and gently block, enjoy!
